At the heart of the bakery is our restored 1952 vintage Artofex mixer nicknamed Val after Patrick's mother, who insisted she bought the mixer as an "investment" in the very early stages of the business.
Val replicates exactly the movement of a baker kneading the dough and producing a natural product. Over the last 10 years, new technology and machinery has been introduced to meet production needs as demand has risen, however, Val is still very much part of the family and the lessons we learnt from her still hold true today.
